Recipe – Healthy Macaroni Salad

What you need

Uncooked elbow macaroni – 3 cups
Distilled white vinegar – 3/4 cup
White Sugar – 2/4 cup
Mayonnaise – 1/2 cup
Yellow mustard(prepared) – 1 1/2 tablespoons
Salt – 1 1/2 teaspoons
Ground Black Pepper – 1/3 teaspoon
Onion(chopped) – 1 (large), otherwise 2
Celery(chopped) – 2 stalks
Green Bell Pepper(Seeded & Chopped) – 1
Sliced olives – 1(2.25 ounce) Can
Optionals:
Carrot(Grated) – 1/4 cup
Pimento Peppers(Chopped) – 1 1/2 tablespoons

What to do

1. Bring to boil a large pot of lightly salted water.
2. Add the macaroni. Cook until it is tender. Rinse under cold water and drain.
3. Mix the mayonnaise, vinegar, sugar, carrot, salt, mustard and pepper in a large bowl.
4. Add onion, green pepper, celery, sliced olives, pimentos, carrot and macaroni while stirring.
5. Refrigerate for minimum 4 hours and then serve. It is preferred to refrigerate overnight.
