Recipe – Lip-smacking Egg Noodles With Smoked Duck & Peas

Have you tasted ‘egg noodles’? I know most of you have already relished this popular Chinese delicacy. But ‘egg noodles with smoked duck and peas’? Sounds different? Tastes different too! This healthy Chinese food with low fat and high fiber has been gaining rapid global popularity. Let us take a peek into the recipe of this lip-smacking dish:


For preparing noodles:

Fresh and thin Chinese egg noodles – 1 packet containing 17 ounces (about 425 gm)

Smoked duck (or roasted chicken) – 1 lb

Snow peas (or sugar snap peas) – 3.5 ounces (about 1.5 cups)

Fresh and cleaned cilantro leaves – (1/2) cup

Green onion – 1 big (2 tablespoons)

Red bell pepper – 1 piece

Jalapeno chili (red with seeds) – 1 tablespoon

For preparing the dressing:

Unseasoned rice vinegar – 1 tablespoon

Soy sauce – 2 tablespoons

Hoisin sauce – 1 tablespoon

Olive oil – 2 tablespoons

Method of preparation:

The entire procedure of making this special ‘egg noodles with smoked duck and peas’ is divided into two phases. Firstly, take a large bowl for preparing the dressing properly. Put all the ingredients taken for dressing such as hoisin sauce, soy sauce, unseasoned rice vinegar and olive oil into it one by one. Now whisk the entire mixture to blend all the items smoothly and evenly. Once done, leave the bowl at room temperature and start preparing the egg noodles.

At first, cut the smoked duck (or if you want you can use roasted chicken here) into 3” x (1/4)” strips. Slice the green onion and jalapeno chili thinly so that they become equal to 2 tablespoons and 1 tablespoon respectively. Snow peas or sugar snap peas should be cut lengthwise into thin pieces. Also, slice the red bell pepper into strips like matchsticks.

Now, take a large sauce pan and pour some water into it. Place the pan over heat and wait until the water gets boiled. On the other hand, take a medium-sized bowl. Put the cut snow peas as well as the thin slices of the red bell pepper in it, and pour the boiled water into it so that the mixture of peas and pepper can absorb the water. Leave the entire thing for 10-20 seconds and then pour out the water completely. Again, add some cold water to the stuff, rinse well and drain it away.

In another large bowl, put the fresh and thin Chinese egg noodles. Boil some more water in the sauce pan again and when finished boiling, pour it over the noodles carefully. Let them absorb boiled water for at least 20-25 seconds. After that, drain away the excess water from the noodles. Do not forget to stir the noodles continuously when soaked into water otherwise they will stick together. However, rinse the noodles with cold water and pour it out properly.

Finally, here comes the most important part of the preparation. Take again the bowl in which you prepared the dressing. Put the egg noodles, the mixture of snow peas and red bell pepper, the smocked duck (or the roasted chicken), green onion, jalapeno chili and cilantro leaves one by one into the bowl. Now, start tossing until all the ingredients become smoothly and evenly coated by the dressing and get mixed well. Your ‘egg noodles with smoked duck and peas’ is ready. Just serve the noodles hot and enjoy!
