How delicious can be the combination of crispy fried pork and sweet-n-sour sauce? Simply ‘awesome’! Yes, this is the only word that can be used to describe the tangy and tasty Chinese dish – ‘sweet and sour pork’. Pork, being a tasty ingredient of Chinese food items, is also considered as an excellent source of protein, minerals like iron, zinc, selenium, phosphorous etc. and B vitamins. And when cooked with a perfect balance of ketchup and vinegar, it truly tastes wonderful. Here is the recipe of sweet and sour pork with fresh vegetables:
Boneless pork – 1 pound
Thinly sliced Green onions – (1/4) cup
Cider vinegar – (1/4) cup
Thinly sliced almonds – (1/4) cup
Minced garlic – (1/2) teaspoon
Grounded ginger – 1 teaspoon
Sugar – (1/4) cup
Salt – 1(1/2) teaspoon
Water – (1/2) cup
Canola oil – 1 tablespoon
Ketchup – 2 tablespoons
Hot chili sauce – 2 teaspoons
Soy sauce (low sodium) – 3 tablespoons
Chunks of pineapple – 1 large (approximately 8 ounces)
Chunks of onion – 1 large
Red bell pepper – 1 medium-sized (cut into pieces)
Green bell pepper – 1 medium-sized (cut into pieces)
Cornstarch – 2 tablespoons
Preparing sweet and sour pork is absolutely easy and interesting. At first, cut the boneless pork into small cubes (each of 1 inch). Also, take the chunks of pineapple and extract the juice carefully from it. Keep the juice aside for future use. Now, you need to preheat the oven to a temperature of about 400 degree F. Once done, spread a baking sheet (preferably with a non-stick coating) into the oven and put the slivered almonds on that. Let the almonds bake for at least 4 minutes. When they will get roasted properly, take them out of the oven and keep aside.
Now comes the part of mixing. Take a large bowl and place the pork cubes into it. Pour 1 tablespoon cornstarch and 1 tablespoon soy sauce into it and mix all the ingredients well. Also, toss the entire mixture so that the pork cubes get coated properly. In another large bowl, put cider vinegar, low sodium soy sauce, hot chili sauce, ketchup, sugar, rest of cornstarch, and the drained out pineapple juice one by one. Whisk the whole thing well so that you get a smooth and even mixture.
You are all set to cook sweet and sour pork now. Take a skillet for this purpose and put it over medium flame. Pour 1 tablespoon of canola oil into the skillet and twirl it around to spread the oil properly. Add the marinated pork cubes to the hot oil now. Sauté the cubes efficiently for at least 3 minutes. After that, add chunks of onion, grounded ginger and minced garlic to the half-cooked pork cubes and fry for another 1 minute. Again, add the chunks of pineapple (left after extracting the juice), pieces of red and green bell pepper, and salt to the skillet. Stir the whole stuff constantly for minimum 3 minutes and let it be cooked.
Finally, take the previous bowl in which you have already prepared the vinegar mixture. Add it to the skillet to blend it with the pork mixture. Also, add water to the whole thing. Let the entire mixture to boil. Once it will get cooked properly, take it out of the flame. Your sweet and sour pork is ready. Garnish the mouth-watering dish with roasted almonds and thinly sliced green onion. Enjoy the taste!
